  • PSOUL is a wine that reflects the soul of the winery: the passion for vine-growing, the expression of the terroir and artisanal winemaking that allows the fruit to take centre stage. The name “PSOUL” is an acronym: “P” stands for Pinea and “500L” for the single barrel used in its production and aging. This limited edition consists of 333 1.5-litre bottles (Magnum format).
  • This wine comes from the “Cardisanto” limestone plateau, a microparcel with very high chalk content that we determine not only by soil type but also by tasting the berries, marking plant by plant. PSOUL is a wine produced entirely by hand, extracted so carefully that time and years of ageing will confirm its subtlety.

“Shortly before the bottling of the 2018 vintage of PINEA, I marked a very special large barrel, as it contained the wine from our oldest vineyard, with the acronym ‘500L’. And it turned out that, in the way they were written, those letters made the word “SOUL”. The magic of this discovery, combined with the exceptional quality of the wine it contained, meant this unique barrel had to go its own way. That was how PSOUL began”

Tasting notes

Ageing: 3 winters Keep: 30 years

An unctuous, medium to full-bodied wine, bright and clear in appearance with a cherry red rim.

A great blend of fruit, floral and spicy aromas, dominated by blackberries, ripe black cherries, dried figs, strawberries and blackcurrants, with perfumed aromas of hibiscus, violets and lavender and hints of tobacco leaves, fresh leather and cedar wood. Deeply intense black fruit defining good ripeness, over an elegant, toasted background.

Medium-bodied with a powerful but elegant approach and a rich, velvety texture from beginning to end. The sculptured tannins are well integrated, showing a perfect balance as they pass through the mouth, with vibrant acidity and a long, flavourful finish. Sweet black forest fruits, blackberries and ripe black plums blend with aromas of eucalyptus and spices, like clove and black pepper, while mild flavours of nuts, coffee and smoke enrich a harmonious finish.

The origin

PSOUL comes from 50-year-old vines located on the limestone plateau of “Cardisanto”. This beautiful landscape, between 931-942 metres above sea level, is the result of a conjunction of different exposures and the complexity of its soils, with bedrock present everywhere, even on the surface.

Vine-growing and harvest

The grapes are harvested by hand in 15 kg boxes from plants selected by tasting.

Our work in the fields is characterised by utmost respect for the environment combined with biodiversity and the incorporation of the best-established biodynamic practices. We are committed to a model of sustainable vine-growing to make our wines a true reflection of the terroir from which they originate, with the grape taking centre stage.

Wine-making and ageing

Each bunch is selected by hand and then gently destemmed. We check three small components of the same block separately, carry out open fermentation that starts slowly with the action of indigenous yeasts, and follow up closely with only manual punching down. One of the three components ferments in Allier and Tronçais wood, which we request with many months of drying to reduce the sensory impact, giving the wine structure and depth. The second component is fermented in an open barrel, 100% de-stemmed. This provides the finesse. Finally, the third component is also fermented in an open barrel but with 30-40% whole clusters to achieve complexity, herbal touches and texture.

Recommended consumption

It is ready to be enjoyed as soon as you have the bottle in your hands, but it will be at its very best from year 8 onwards.

We recommend serving the wine at 8-9º.

“The result of PSOUL’s alchemy is an aesthetic wine, delicate as saffron, but as powerful as red meat and game cooked with dried fruit.

It is elegant and long, and you will find excellent expression in the form of ripe fruit compote with hibiscus notes, or sweet and savoury crunchy spices with woodland honey.

It’s a deep, spicy wine enhanced by the flavour of garlic toasted in butter. The finish is so subtle that it also goes well with grilled rockfish from the icy waters of the north.
