PSOUL represents a journey into the “soul” of the project. The spearhead of PINEA’s aesthetic and stylistic pursuit, capturing the pure essence of a place in just a few precious bottles.

  • The 2021 growing season in Ribera del Duero, particularly in the Burgos region, was shaped by unique conditions that enabled the crafting of a wine as refined and demanding as PSOUL. Winter, marked by freezing temperatures, included the historic ‘Filomena’ snowstorm, which blanketed the vineyards with an exceptional layer of snow, providing vital water reserves for the vines.
  • Spring brought well-distributed rainfall, encouraging vigorous vine growth, while a summer with moderate temperatures allowed for slow, even ripening. The cool September nights preserved the natural freshness and acidity of the grapes. A meticulously planned harvest ensured the selection of fruit with remarkable depth and balance, capturing the purity of the terroir and the distinctive character of this wine.

Tasting notes

Aging: 3 winters Cellaring potential: 30 years

A wine of medium-high intensity, with a cherry-red rim and brilliant clarity.

On the nose, it reveals an elegant blend of fresh red fruits, complemented by floral notes of violets and lavender, and a subtle spiced background with hints of cassis and cedar.

On the palate, it offers a velvety texture with fine, well-integrated tannins. Its vibrant acidity brings freshness and balance, culminating in a long, persistent finish with echoes of red fruits, gentle spices, and a delicate bitter nuance that enhances its complexity—a testament to the perfectly integrated inclusion of whole stemps.

Own vineyards:
PSOUL comes exclusively from Carralagos, a distinctive plot within our Cardisanto estate, located at 950 metres above sea level—the highest elevation in the PINEA Domain. This vineyard, characterised by its nearly white soils due to an exceptionally high limestone content, represents a truly unique terroir. The combination of altitude, soil composition, and microclimate yields grapes of exceptional purity and expression, forming the foundation of this extraordinary wine.

Harvest by hand:
From October 5 to 13, 2021.

Vinification and aging:
The crafting of PSOUL 2021 is defined by its integral vinification, with fermentation and ageing carried out exclusively in French oak barrels. Born from a micro-parcel whose yield determines the production each year, this wine reflects the essence of place and time with precision. Fermentation took place in lightly used French oak barrels, kept open throughout the process to allow gentle oxygenation—enhancing elegance and balance between fruit, tannins, and wood. A mix of 50% whole clusters and 50% destemmed grapes adds unique aromatic and structural complexity. Malolactic fermentation and ageing continued in closed barrels of the same type, refining the tannins and adding depth, without letting the oak overpower the expression of the terroir.

PSOUL 2021 matured slowly over the course of three winters, a process that lends exceptional roundness and longevity. It was bottled unclarified and unfiltered, preserving its artisanal essence. Any natural sediment it may present is a testament to this philosophy of minimal intervention—a celebration of purity and authenticity.

Number of bottles and presentation formats: 300 magnum (1.5L.) and 150 standard size (0.75L.).

Recommended consumption:
It is ready to be enjoyed from its release date, but will reach its maximum fullness 6-7 years after bottling.

We recommend serving at 18º and allowing to temper.

“The result of PSOUL’s alchemy is an aesthetic wine, delicate as saffron, but as powerful as red meat and game cooked with dried fruit.

It is elegant and long, and you will find excellent expression in the form of ripe fruit compote with hibiscus notes, or sweet and savoury crunchy spices with woodland honey.

It’s a deep, spicy wine enhanced by the flavour of garlic toasted in butter. The finish is so subtle that it also goes well with grilled rockfish from the icy waters of the north.

The PSOUL pairing is supposed to express the magic of the living environment around us. It’s up to each of us to work out how to achieve it”
